After all, truffles have become synonymous with luxury, and their characteristic earthy, umami-rich flavour will surely make an impression on your guests.
Due to the delicate fragrant aroma of black truffle, most cooks agree that it’s best enjoyed with mild, creamy flavours. That makes cheese and truffles a match made in heaven! A classic French cheese such as Brie de Meaux is delicious on its own, but the rich, nutty notes of black truffle create a truly sumptuous combination that’s bursting with flavour in every bite.
Before we tell you how to make your own truffled Brie de Meaux, let’s take a closer look at its two main ingredients.
Brie de Meaux : a beloved French cheese
The poet Eustache Deschamps may not have been a great fan of France, but even he had to admit to the magical power of Brie de Meaux when he proclaimed the cheese “the only good thing to come out of this country”. This soft-ripened cheese has a sticky, creamy texture, and its sweet buttery flavour carries undertones of nuts and mushrooms.
Périgord black truffle : a winter delicacy
Périgord black truffle (also known as the “black winter truffle” since it can only be found from December to March) is native to Southern Europe and is the most fragrant of all truffles. It carries a rich, complex aroma and a deep savoury flavour that can be described as sweet, musky, and nutty.

Brie de Meaux with Périgord black truffle: the secret recipe
For this recipe, you’ll need :
200g of Brie de Meaux
50g of mascarpone
10g of Périgord black truffle shavings
- Cut the brie in half lengthwise.
- In a small bowl, stir the mascarpone to smooth out any lumps, then add the black truffle shavings.
- Spread the truffle mixture on the bottom half of the brie.
- Place the top half of the brie back on, and then wrap the cheese tightly in film to get everything to “meld” back together.
- Store your truffled Brie de Meaux in the refrigerator for 24 to 48 hours so that the flavours of the Périgord black truffle can diffuse through the cheese.
For even more indulgence, you can shave some additional truffle shavings over the top of the brie when serving it. This delicious cheese can be served simply with crackers or crusty bread, or on a cheese board with fresh grapes or slices of Granny Smith apples.
