These cute little croquettes are easy to make with pumpkin and brie cheese. The best part is when they melt in your mouth. We’ll be spreading Brie inside bread for grilled cheese from now on.

Remove the guts from the pumpkin and cut the pumpkin into pieces, leaving the skin on. Place the pumpkin on a sheet of plastic wrap, sprinkle with 1 tablespoon of water (not to be used) and wrap.
Cook in a microwave oven at 600W for 3 to 4 minutes, until a wooden skewer goes through easily.

Peel carefully as they are hot, place in a bowl and mash with a wooden spoon.

Add the salt and pepper, and mayonnaise to the mixture and mix well until smooth.

Take 30g of each of the three pumpkins and roll them up, adding the French Brie in the middle. You can also use plastic wrap or dip your hands in water and roll it up.

Batter with flour, egg and breadcrumbs in that order.

Heat the oil to 180°C and fry until golden brown.

Serve it hot!
