Preparation

Use a serrated knife to carefully cut the top off the eggs, two-thirds of the way up. Remove the tops and pour the eggs into a bowl.

Cut the brioche into strips.

Melt half the butter in a pan and grill the brioche. Remove from heat and add the remaining butter to the pan.

When it is melted, add in the beaten eggs, lightly scrambling them. When the eggs are creamy, stir in the cream and chopped chives, then remove from heat.

Spoon the eggs back into the shells and top with a small spoonful of caviar. Serve with the slices of brioche.
