Preheat the oven to 200°C (convection).

Wash the pumpkin. Cut it in two and remove the seeds and strings. Without peeling it, cut the pumpkin into slices, not too thin, not too thick. Place them in a mixing bowl, drizzle with olive oil, add two to three grinds of pepper and mix with your hands. Lay the pumpkin slices on a baking sheet lined with greaseproof paper.

Mix the oats, butter, Parmesan (pre-grated) and sesame seeds together in a large bowl.

Sprinkle the crumble mix over the pumpkin slices. Bake for 35 minutes. Serve this dish piping hot, straight from the oven.
