Preheat the oven to 350°F.

Peel the garlic and shallot, then cut the shallot into quarters.

Using a sharp knife, make a circular incision in the top of the cheese. Use a small spoon or spatula to carefully remove the top layer of the rind. Insert the garlic clove and shallot pieces into the cheese. Pour the white wine over the top, and sprinkle with thyme.

Bake for 20 minutes, until the cheese is fully melted. For the last 3 minutes, switch the oven to grill to create a crispy top.

Serve with roasted grenaille potatoes, a fresh salad, and slices of farmhouse bread.
