Preparation

Wash the leeks. Cut the olives and the bacon.

Remove the outer layers of the leeks and cut them in half lengthwise, then place them in a baking dish face down with oil, pepper, and salt.
Bake for 15 minutes.

Remove the leeks from the oven, turn them over and add the rest of the ingredients, pancetta, grated Emmental cheese, breadcrumbs, and green olives.

Bake for 20 minutes at 180 degrees with heat up and down and then grill for 10 more minutes.

Enjoy these leeks both hot and cold.
