It is made from locally grown mustard seeds combined with a mixture of water, at least 25% Bourgogne PDO white wine, salt, sugar, and spices. Unlike other mustards, it uses white wine instead of vinegar, imparting a unique flavor that sets it apart from traditional Dijon mustard.
