Mini chocolate and sea salt lava cakes

Impress your guests with these lava cakes featuring a gooey center and delightful hint of sea salt.

Preheat the oven to 180 °C.

Place 8 muffin cups in a muffin pan.

Using a double boiler, melt the butter and chocolate pieces. Stir often.

In a salad bowl, blanch the eggs with the sugar while whisking vigorously. Add the sifted flour.

Pour the chocolate and butter into the salad bowl and mix well.

Pour the batter into the muffin cups, filling each cup up halfway. Add a chocolate square, then sprinkle a pinch of sea salt on top.

Pour the rest of the batter on top, then refrigerate for 1 hour.

Bake for 12 minutes.

Let cool, remove the cakes from the pan, and top with icing sugar.
