Preparation

Preheat the oven to 160 °C. Prepare the crumble: combine 100 g of flour, 100 g of brown sugar, 100 g of ground hazelnuts and 100 g of softened butter in a bowl. Combine the ingredients with your fingertips until you obtain a sandy crumble.

Prepare the cake batter. Remove the pulp from the vanilla pod. Cut the plums into quarters.

In another bowl, whisk 2 eggs with the brown sugar. Add 15 cl of milk and the vanilla pulp, and mix. Add 90 g of melted butter. Add 250 g of sifted flour and ½ a sachet of baking powder. Mix vigorously and then add the plums. Gently fold them into the batter. Pour everything into a greased cake tin.

Arrange the crumble mixture on top. Add a handful of crushed hazelnuts.

Bake for about 1 hour at 160 °C. Check whether the cake is done by sticking the tip of the knife into the center.
