Leek Toasts

A recipe to showcase leeks with this sourdough toast and delicious homemade mayonnaise! Simple and quick, this is a gem of a dish! 

Ingredients For

    Sourdough Bread
    x 1
  • x 1
  • French leek
    French Leeks
  • 10 cl
  • PGI Burgundy mustard
    Burgundy Mustard PGI
    1 tablespoon See the article
  • 1 bunch
  • 1 handful
  • x 1
  • 0.50 bunch

Preparation

Wash and slice the leeks. Pour a small amount of olive into a frying pan and add the leeks. Cook for 5 minutes on each side.

In the meantime, cut the bread into thick slices and toast in a toaster or in the oven.

In a large bowl, beat the egg yolk, mustard and a pinch of salt using a fork. Add the oil in a thin stream, little by little, to obtain a mayonnaise. Add the chopped parsley and lemon zests.

Crush the cashew nuts.

On each slice of bread, place a spoonful of mayonnaise, followed by leek slices and cashew nuts. Sprinkle with chervil.
