Chicken kebabs marinated in lemon and thyme, with roasted bell peppers
These quick-cooking kebabs are very easy, perfect for grilling during the warmer months.

Preparation

Cut the chicken into pieces. Combine the olive oil, honey, lemon juice and thyme in an airtight container.

Add the chicken and cover it with the marinade. Allow to marinate for at least 30 minutes in the fridge.

Cut the bell pepper into chunks, carefully removing the white parts and the seeds. Place them on a baking tray and roast them for 20 minutes at 200oC

Cut the remaining lemon into half-slices. Arrange the chicken pieces on skewers, alternating the meat with the lemon half-slices.

Cook the kebabs under a hot grill, for three minutes each side.

Enjoy with the roasted bell pepper!
